scrambled eggs with mushroom,baby rocket and tomatoes


3 free range eggs

3-4 pcs of champignon or other mushroom

a handful of baby rocket

a handful of cherry tomatoes

grass-fed butter

salt and pepper

grated parmesan (optional)

How to make it

  • grill mushroom in the pan without fat
  • when the mushroom starts to release the aroma put in about 2-3 tbsp of butter
  • when the butter is melted put in 3 eggs and stir well
  • turn off the heat when the eggs start to get thicker consistency but keep stirring
  • season with salt and pepper the top with baby rocket and tomato
  • sprinkle with grated parmesan
