Mushroom cream soup

What you need

  • Mirepoix(carrot, celeriac and onion) and I always add leek too.How much? About 25-30% of the amount of mushroom
  • Mushroom. The best I can find here is champignon.In the recipe I use 400g
  • 2-3 cloves of garlic
  • grass-fed butter
  • heavy cream.250-300ml
  • water
  • pot
  • bar mixer or blender
  • cheese (optional)
  • salt, pepper and some herbs such as thyme and oregano

How to do

1.Sweat mirepoix with butter in the pot until transparent

2.Add chopped mushroom and sauté until u start to smell the aroma of the mushroom when cooked

3.Add water to cover the amount of vegetable

4.Add 2-3 cloves of garlic and simmer until soft

5.Blend with bar mixer

6.Add cream and stir

7.Add salt,pepper and some herbs

8.If you have leftover cheese you can add it to make it more flavourful too

Now stir well and taste it.If it’s too thick you can either add a bit water or milk.But if it’s too thin you can add grated cooked potato or some bread crumbs to thicken it.
