pumpkin soup

What you need

  • Mirepoix(carrot, celeriac and onion) and I always add leek too.How much? About 25-30% of the amount of pumpkin
  • Pumpkin ( I use about 1.4 kg in the recipe) 
  • 2-3 cloves of garlic
  • grass-fed butter about 5 tbsp
  • Milk (about a cup) or you can use heavy cream but I forgot to buy it 
  • water
  • pot
  • bar mixer or blender
  • cheese (optional)
  • saffron (optional)
  • salt, pepper and some herbs such as thyme and oregano

How to do

1.Sweat mirepoix with butter in the pot until transparent then add diced pumpkin and continue sweating 

2.Add water to cover the vegetable and garlic then cook until soft

3.Add herbs, salt and pepper 

4.Add safran ( optional)

5.puree with bar mixer then add milk and continue cooking

6.taste it and add butter, salt,pepper as you want
