cozze alla marinara ( Pirunita’s style) Mussels in tomato sauce my style

I opened a fridge and grabbed things I could find and whipped up this dish.

Easy step by step for newbies 🙂

What you need

  • A pot and a lid
  • 1kg mussels (cleaned, if it’s opened then it’s dead.Throw it away)
  • A cup of diced tomatoes
  • Half a cup of diced onion
  • 2 cloves of garlic
  • Some herbs such as thyme and oregano.I put saffron too(coz I love it)
  • Salt and pepper.And a piece of lemon
  • 2 tbsp of Grass-fed butter
  • White wine (optional – I have the bottle that already opened so I use it just a bit)
  • Herbs for garnish such as Italian parsley, chives,parsley or dill(from my own garden;) )

How to cook

1.Sweat onion until transparent 

2.Add chopped tomatoes and garlic, then cook until soft

3.Add herbs and season with just a little salt and pepper

4.(I add saffron and a bit of white wine but this is really not necessary) 

5.Add cleaned mussels then cover with lid and wait until they are cooked(about 3 mins depend on the heat)

6.Stir well to check if they are all cooked then serve hot 🙂 with dill sprinkled on top and a squeeze of lemon
