Gazpacho – cold tomato soup

What you need

  • 6 medium size organic tomatoes
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 tbsp ginger
  • 1 tsp turmeric
  • salt and pepper
  • some good quality extra virgin olive oil
  • a bowl
  • hand mixer
  • a pot

How you make it

  • Blanch and peel then coop out the seeds of tomatoes

First you boil the water and put in tomatoes that you already made some slit on the skin.Let them sit in the boring water for about 1-2 mins then take them off and put them in cold or ice water.Then peel off the skin.

  • cut tomatoes, onion and garlic into pieces.It’s not important big or small because the mixer will blend them all together
  • Now put all ingredients in the bowl including ginger, olive oil and some turmeric and mix them until well blended
  • Then season with salt and pepper

The reason I add ginger and turmeric because they are anti inflammatory and also add some flavour to the soup.
